The local take

Cured was a tiny wine and charcuterie bar, 36 square metres, on Market Lane, the small lane off the Corso. Its boards drew on about 18 cured meats and 11 cheeses. Almost all the salumi came from free-range pigs in Byron Bay, with Prosciutto San Daniele the exception. Plenty of the wines were poured by the glass.
