Manly Spirits distils gin, vodka and an increasingly awarded single malt whisky in a Brookvale warehouse, using native botanicals — sea parsley, saltbush, kelp — foraged from the coastline you've just been swimming along. The cellar-door tasting bar walks you through the range in flights, and the cocktails go far deeper than a distillery door needs to.
